Why are Kennet Crayfish superior?

Trapped exclusively along the River Kennet, our signal crayfish (pacifastacus leniusculus) are from some of the only chalk streams in the world. The purified waters gives the crayfish their unique and delicious flavour. Permeating through chalk bedrock, our waters are gin-clear and nutrient rich which provides us with such amazing fish.
