Wild caught Crayfish are seasonal and therefore may not be readily available between the months of October to May.

Trapped exclusively along the River Kennet, our signal crayfish (pacifastacus leniusculus) are from some of the only chalk streams in the world which gives them their unique and delicious flavour due to the purified water. Permeating through chalk bedrock, our waters are gin-clear and nutrient rich which provides us with such amazing fish.
